<p>Effectivement, Julien Gatineau n&rsquo;aspire qu&rsquo;à une chose : mettre en valeur le produit autour de réalisations simples mais justes. Et ça se sent.Les mets assez classiques, affirment le goût des ingrédients qui les composent. A la carte &#8211; qui change toutes les deux semaines, on retrouve parmi les entrées, des Asperges blanches des Landes, sauce Hollandaise ; de la Burrata et caviar d&rsquo;aubergines ou encore un Tempura de gambas au sésame façon Thaï. Belle réussite de la Burrata crémeuse et relevée par la préparation d&rsquo;aubergines. Un peu déçue sur la cuisson des asperges, mais pas sur les quantités.</p>
<p>Côté plat : une jolie découverte avec le Saumon Label Rouge &#8211; que j&rsquo;avoue ne prendre que très peu de fois, servi avec un quinoa en salade, et une sauce vierge. Le mélange des températures, la cuisson juste saisie du saumon et la fraicheur du Quinoa en taboulé : un grand bravo !</p>
<p>Sont également proposés un Cabillaud rôti au beurre et légumes printanniers, et pour les carnaciers : une Pluma Ibérique, sauce chorizo, polenta crémeuse à la sarriette ou encore un Tartare de veau et son condiment tonato. On note la variété des plats aux diverses influences régionales : un bon moyen de satisfaire toutes les envies.</p>
<p>Terminer alors en douceur avec une salade de fruits rouges (Gariguettes &amp; framboises), un moelleux (coulant!) au chocolat demi sel, glace au caramel &#8211; très bien réalisé, ou une tarte aux abricots et crème verveine, parmi d&rsquo;autres.</p>
<p>L&rsquo;addition ? Une moyenne de 15€ l&rsquo;entrée, 22€ le plat, et 10€ : très correct pour la qualité et les quantités servies.</p>
<p>A noter un cadre moderne et confortable &#8211; ambiance tropicale chic, avec des espaces bien différenciés. Histoire de pouvoir s&rsquo;y rendre à deux pour un rendez-vous romantique, comme à plusieurs pour une soirée gourmande entre amis.</p>
